Storage and transport
– Once harvested, the aubergines are air-cooled to 12-15 ºC as quickly as possible.
– Aubergines can be stored perfectly well for 2 weeks at a temperature of 10-12.5 °C and 90% relative humidity.
– Aubergines are extremely sensitive to ethylene and must therefore not be exposed during storage or shipment to other products that generate this gas because this could reduce the storage time by 3 to 5 days.
– Temperatures of 10-12 °C and humidity levels similar to those in storage, i.e. 85 – 95%, must be maintained during distribution.
